Serves: 16-20 Donuts

Dash, drive or fly to your nearest Trader Joe’s and pick up a box or two of their Ube Mochi Pancake & Waffle mix! Of course you can make yummy waffles, but you can also make baked Ube Mochi Donuts with them 🤯they turn out like slightly chewy cake donuts (these aren’t the same texture as pon de ring donuts). I made a beautiful ube glaze for them, you can usually find Ube Flavoring at your local Vietnamese or Filipino market, you can also order it here. If you want to be extra, drizzle on some melted white chocolate after you glaze them.

Baked Ube Mochi Donut Recipe made with Trader Joe’s Ube Mochi Pancake Mix

Ingredients

UBE DONUT GLAZE

  • 3 Tablespoons Coconut Milk
  • 1½ Cups Powdered Sugar
  • ¼ Teaspoon Ube Flavoring

Method

  • 1)

    Pre-heat oven to 400°F. In a large bowl, add 4 Large Eggs & 4 Tablespoons of melted Butter, whisk to combine well. Add 1½ Cup Coconut Milk & add the full box of 13.3 oz Trader Joe’s Ube Mochi Pancake & Waffle Mix. Stir well with a whisk until the batter is completely smooth.

    *If the coconut milk is clumpy from being cold, warm it up just enough so it’s smooth before adding it to the mix

  • 2)

    Use a brush to oil the donut pans well. Place the batter into a piping bag or large ziplock bag, snip the end & pipe the batter into donut molds and fill about 90% full.

  • 3)

    Metal Donut Pans: Bake at 400°F for 13 Minutes.

    Silicone Donut Pans: Bake at 400°F for 15 minutes.

    When they are cool enough to handle, move them onto a cooling rack.

  • 4)

    Make the Ube Glaze by adding 3 Tablespoons Coconut Milk, ¼ Teaspoon Ube Flavoring and 1½ Cups Powdered Sugar into a small sauce pan. Use low heat and stir until it’s completely smooth. You can add a tiny bit of water if it seems too thick to dip, but this glaze is supposed to be on the thicker side. Pour the glaze into a bowl, dip the donuts and let the glaze set before serving. Enjoy!

      use less ube flavoring, too much will make the glaze too hard

    Unfortunately these didn’t work for me at all. The donuts didn’t rise at all (using the Wilton pan). Even after letting the donuts cool overnight, the glaze just soaked into them. They taste fine but look pretty sad… and are very sticky. My only variation from the recipe was using dairy milk in the glaze (and upped the powdered sugar to thicken it).
