I would never use snorlax for atking! Too slow. Snorlax is perfect for defending.
It depends on the gym but elite pokes with fast 'quick moves' like Dragonite, Vaporeon, Gyarados or Exeguttor should be there since they're good overall.
Anyways, atking gyms is so easy that you don't need high quality pokemons to do it.

It depends on the gym, of course.
You care about two resources when you attack a gym: time and potions (including revives). Since not any Pokemon can perform best in every situation under either criterion (even Mewtwo, he beats Dragonite slower than Dragonite), you need to pick according to the gym defenders.
And since there's no such functionality as "Default Line-up" yet (I wish there was), it's too early to discuss about most optimal ATK team. When such functionality is released, then we'll be facing your question immediately - what default line-up should we use?
That's a question for another time.

The 6th spot really could be a Pidgey. So I said a 2nd Lapras Counter just for the heck of it.
Honestly I couldn't imagine needing more than 2 Dragonites + 2 Vaperons. Since I could use Vaperon to beat Lapras.

Yeah a good chance those 2 Counter spots would be Jolteons.
I thought about Venusaur, but I only have a Perfect Razor Leaf/Solar and no Vine Whip one. so I would just default to dragonite for killing off Vaperon.

If I live in that area, I would definitely put an Arcanine there, even a Bite/Bulldoze will scare most attackers.

My favorite team is : 1 dragonite(for everything but Lapras), 1 Lapras (for dragonite), 1 venusaur(for vaporeon) 1 jolteon (for gyarados), 1 Charizard (for exeggutor and Lapras), 1 Alakazam for Snorlax.
Could also be 5 Dragonite and one arcanine but it's less fun.

Are you talking about the best all-around army for attacking generally anything?
Then it depends on what your goals are. Is it:
- defeating the gym as fast as possible
- defeating the gym using the least potions
- defeating the gym with the least fainted Pokémon etc.
Because technically, Snorlax is the best Pokémon for attacking if you're only talking about how much damage it can deal before fainting. I personally think that this is a really poor way of measuring offensive strength for a Pokémon. For this reason I never use Snorlax for attacking and I know many other players don't either.

If I had to attack without looking, but expected a typical gym composition I would take:
Dragonite
Lapras
Arcainine
Vaporeon
Venasaur
Jolteon (or possibly another Vaporeon)

I hold a lot of gyms, so I decided a long time ago I'd rather put pokemon with high CP at the top of a gym than to reserve him for my attack team. Therefore though I have 3 3000+ Dragonites they are always in gyms, so this is a list of 'optimal' attackers that aren't gym worthy defenders.
What I've done is pick the best pokemon of each type that isn't defender worthy and powered them up to around level 29 and put them on my attack team.
I maintain the same consistent team of 12:
- Alakazam (Psycho Cut/Psychic)
- Arcanine (Fire Fang/Fire Blast)
- Charizard (Wing Attack/Fire Blast)
- Cloyster (Frost Breath/Blizzard) *I used to keep my offensive Lapras out of gyms to serve this role but with Cloyster's recent buff he's more than capable of serving the role solo
- Exeggutor (Zen Headbutt/Solar Beam)
- 2 Jolteons (One with Thunder, other with Thunderbolt) *So many Gyarados these days...
- Pinsir (Fury Cutter/X-Scissor) *This doesn't get much use now but will with the coming Psychic types around the corner... until I get a good Scizor that is.
- Sandslash (Mud Shot/Earthquake) *Probably most controversial on the list but Rhydon's CP is too high to reserve one for attack only IMO
- Venusaur (Vine Whip/Solar Beam)
- Vaporeon (Water Gun/Hydro Pump) *Though he's defender worthy I already have 4 other Vapes I put in gyms
- Snorlax (Lick/Hyper Beam) *Moveset isn't great for defense and I throw him into the 6th slot a lot or as filler when I need to
If I had to only pick 6 from this list they'd be:
Cloyster, Jolteon, Exeggutor, Arcanine, Vaporeon, Venusaur

I use the same team every time, and it can destroy any gym, you just need to adapt the order depending on the defense team.
- 2 dragonites (DB/DC + DB/DP)
- 1 Gyarados (B/HP)
- 1 Vaporeon (WG/HP)
- 1 Jolteon (TS/TB)
- 1 Arcanine (FF/FT)
I am not using pinsir/alakazam because they are too weak, even if I dodge everything, I feel like they can't go as far as the others.
Even Jolteon is surprisingly tough.
Last night I killed 1 Gyarados CP 2700, 1 dragonite CP 3100, 1 dragonite CP 3200 in a raw.
It couldn't deal with another pokemon then, but still very impressive when you know how to use it.
Samething for Arcanine, FT is not like FB, it is shorter to use, so if you get the right timing, you rule any matchup without taking too much damage.

I have two Alakazams with the exact same IVs and movesets, one at 2500 and another around 2300 and they are the absolute best attackers in my roster, they can vanquish anything I don't have a specific counter for. Snorlax and Dragonite become toilet paper when I bring those two 'Zams to the party

No love for Rhydon? Mine is the star of my attacking line up. He's the ONLY favorable match up vs. Snorlax.

except Dragonite, which defeats Snorlax even easier than Rhydon. I guess if you don't have any good pokemon, you can use Rhydon.
Rhydon sucks, but if you're gonna use him Rock Smash is inferior to Mud Slap -- even with super effective damage vs. Snorlax. It's called STAB, and MS is a more efficient attack, generating more Energy per Second and has a shorter cooldown than RS.
You're plain wrong if you think RS is superior in any scenario.

Never needed all 6 to run through a full level 10 gym. Just 3 Dragonites and a Snorlax with hyperbeam. And another snorlax waiting as backup just in case.

They can take out any gym just those three
On the 4th spot is Lapras FB/Blizzard just in case one of my Dragonite gets hit due to me not paying attention but rarely ever go this deep in my line up when attacking level 10 gyms.
5th and 6th spot are my bench warmers that gets no action. I just hit GO whatever the default ones are in those spots to save time.
